Strawberry Mascarpone Yogurt Pie

You will need:

30 cookies (about 1 1/2 cups)
2 tablespoons unsalted butter, melted
2 tablespoons sugar (plus extra for berries)
12 strawberries
1/2 cup (4 oz) mascarpone cheese, at room temperature
1/2 cup (4 oz) Greek yogurt, at room temperature
1/4 cup (2 oz) powdered sugar

Instructions:

Crush the cookies in a food processor or by hand in a plastic bag. Drizzle the melted butter and 2 tablespoons of sugar over the crumbs, and stir until the mixture clumps together. Press the mixture firmly into a pie dish and place it in the freezer. After one hour, slice the strawberries into a bowl, and sprinkle them with a handful of sugar. Stir and let them macerate for at least 15 minutes. In another bowl, stir together the mascarpone, yogurt, and powdered sugar. Layer half of the mascarpone mixture into the crust, and top with half of the strawberries. Add the remaining mascarpone mixture, and layer the rest of the strawberries on top. Let pie set in the fridge for at least 4 hours.

Cranberry Pie

You will need:

1 1/2 cups cookie crumbs
1/4 cup (55 g) brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon salt
1/2 cup (1 stick or 100 g) unsalted butter, melted
1 1/2 cups (12 oz) heavy whipping cream
12 oz (340 g) cream cheese, softened
1/4 cup (50 g) sugar
14 oz (one 400 g can) whole berry cranberry sauce
1 teaspoon vanilla
zest of 1 medium orange
few frozen cranberries for garnish (rolled in sugar)

Instructions:

Mix cookie crumbs with melted butter, brown sugar, cinnamon, ginger, and salt. Press the crust mixture into the pie pan and place it in the freezer for an hour. Beat the heavy whipping cream with a mixer. In another bowl, beat together the sugar and cream cheese. Add orange zest and cranberry sauce. Mix with whipped cream. Layer this mixture into the crust and chill in the freezer for about 6 hours, until firm. Garnish with orange peel and sugared cranberries.

Ferrero Rocher Pie

You will need:

30 chocolate wafer cookies, crushed
3 1/2 tablespoons butter, melted
3/4 cup hazelnut chocolate spread
1 cup (8 oz) heavy whipping cream
1 cup (8 oz) cream cheese, room temperature
1/4 cup sugar
3 oz (90 g) dark chocolate, chopped very fine
10 Ferrero Rocher chocolates

Instructions:

Crush the cookies in a food processor or by hand in a plastic bag. Grate the chocolate, chop Ferrero Rochers. Melt butter and combine with cookie crumbs. Firmly press the mixture into the pie dish and place in the freezer for an hour. With a mixer, combine the cream cheese, grated dark chocolate, sugar, and hazelnut chocolate spread. In a separate bowl, combine whipped cream and 10 chopped Ferrero Rochers, mix well. Remove the crust from the freezer, layer it with the cream cheese mixture. Return to the freezer for 20 minutes. Remove from the freezer and layer with the mixture of whipped cream and chocolates. Decorate to your taste.

Peanut Butter Pie

You will need:

1 1/2 cups of cookie crumbs (about 30 chocolate cookies)
3/4 cups (150 g) of sugar
6 tablespoons of butter, melted
1/2 teaspoon of cinnamon (optional)
5 oz (140 g) of cream cheese, softened
1/3 cup (76 g) of peanut butter
1 cup (8 oz) of whipped cream

Instructions:

Crush the cookies in a food processor or by hand in a plastic bag. Combine the cookie crumbs, melted butter, cinnamon, and 1/2 cup of sugar. Pour the mixture into a pie pan and tightly press it into the bottom and the sides, place in the freezer for an hour. In a bowl, mix the peanut butter, 1/4 cup of sugar, cream cheese, and whipped cream. Remove the crust from the freezer and layer it with the mixture. Return to the freezer for another 2-3 hours. Decorate the pie with chopped chocolate or nuts.

White Chocolate Cheesecake Pie with Berries

You will need:

1 1/2 cups cookie crumbs
5 tablespoons butter, melted
dash of salt
1/4 cup macadamia nuts (or other), toasted
1 cup (8 oz) cream cheese, softened to room temperature
8 oz (200 g) white chocolate, melted
dash of bourbon
2 cups mixed berries
2 tablespoon honey, agave nectar or maple syrup
whipped cream to serve

Instructions:

Crush the cookies in a food processor or by hand in a plastic bag. Combine the crumbs, melted butter, salt and grated nuts. Transfer the crust mixture into a pie pan, firmly press it into the bottom and the sides, place in the freezer for an hour. In a bowl, beat the cream cheese with white chocolate until smooth. Add bourbon and powdered sugar to taste. Fold in the whipped cream until fully incorporated. Spoon filling into crust and put in the freezer for 3 hours or overnight. Serve with maple syrup or honey, garnish with berries and whipped cream.

Lime Pie

You will need:

100 g plain crackers
1/3 cup (75 g) sugar
1/2 cup (1 stick or 100 g) butter, melted
14 oz (395 g) can of condensed milk
1/2 cup lime juice
zest of 2 limes
1 cup (8 oz) whipped cream

Instructions:

Place the crackers into a bowl, and use your hands to crush them. Add the sugar and the melted butter, stir. Put the mixture into a pie pan, spread evenly, place in the freezer for an hour. For the filling, combine condensed milk with the lime juice and half the zest. Add whipped cream, stir until combined. Pour the filling into the crust, scatter over the remaining zest. Place the pie back in the freezer for at least 2 hours until chilled.

Fluffernutter Pie

100 g crackers, crushed
1/4 cup butter, melted
1 cup (8 oz) cream cheese, softened
1/2 can (14 oz can) sweetened condensed milk
1/2 cup peanut butter
1/4 cup (30 g) powdered sugar
1/2 cup marshmallows
1 cup (8 oz) whipped cream
1/4 cup peanut butter chips, melted (optional)

Instructions:

Crush the crackers, mix with the melted butter. Firmly press the mixture into the pie plate and place in the freezer for an hour. In a big bowl, mix cream cheese, condensed milk, peanut butter, and powdered sugar. Beat until the mixture is fully combined. Stir in the marshmallows and whipped cream into the pie mixture. Layer it on top of the cracker crust and put in the freezer for 3 hours or overnight. Before serving, drizzle the melted peanut butter chips on top and add few marshmallows.

Orange & Cream Pie

1 1/2 cup (100 g) crushed crackers
1 1/4 cup (250 g) sugar
dash of cinnamon
1/2 cup plus 2 tablespoons butter, melted
3 1/2 tablespoons cornstarch
1 cup (250 ml) sour cream
1 tablespoon orange zest
1/2 cup (125 ml) fresh squeezed orange juice
3 egg yolks
1 cup (250 ml) milk
1 cup whipped cream (for decoration)

Instructions:

Crush the crackers, combine with melted butter, cinnamon, and 1/4 cup sugar. Press into a pie pan, put in the freezer for an hour. Stirring gently, mix remaining 1 cup of sugar, cornstarch, orange juice, zest, yolks and milk in a pan over medium heat. Cool the mixture, then add the sour cream. Pour the mixture into the cracker crust and chill in a freezer for 3 hours. Serve topped with whipped cream.

Mint and Almond Pie

You will need:

1 1/4 cup (156 g) almond flour
5 tablespoon cocoa powder
5 1/2 tablespoon sugar
3 1/2 tablespoon butter, melted
2 1/2 cups (625 ml) cream, divided
1/2 cup fresh mint leaves, chopped
3 tablespoon water
2 teaspoon gelatin
1/2 teaspoon peppermint extract
4 large egg yolks
food coloring, optional

Instructions:

Whisk together almond flour, cocoa powder, 5 tablespoons of sugar, melted butter. Press into the bottom and up the sides of a pie pan, put in a freezer for an hour. Mix 1 1/2 cups of cream with chopped mint, bring over medium heat to a simmer. Remove from heat, cover with a lid and let it cool for 30 minutes. Strain through a mesh sieve to remove mint leaves.

In a pan, whisk together water and gelatin. Leave for 1 minute to gel, then add a mixture of cream, mint, and peppermint extract. Return to medium heat and whisk until gelatin is dissolved. In a separate bowl, whip the yolks with sugar. Slowly whisk in 1 cup of the hot cream mixture, then slowly whisk egg yolks back into hot cream. Keep whisking until the mixture thickens. Add food coloring, if any. Let it cool for half an hour in a fridge, whisking every 10 minutes. Beat the remaining cream, combine with the cooled mixture. Pour into the crust, put in the freezer for 3 hours.
